Boldwin Poor Man’s Pudding

Ingredients (Serves 12 to 15)

Maple and beer sauce

  • 2 cups (500mL) maple syrup
  • ½ cup (125mL) Boldwin Bitter Extra Spéciale/Rousse
  • 1 ½ cups (375mL) 35% cooking cream

 

Pudding

  • ½ cup (125mL) unsalted butter, softened
  • ¾ cup (175mL) maple sugar
  • 2 eggs
  • 1 ½ cup (375mL) flour
  • 1 TBSP (15mL) baking powder
  • 1/3 cup (80mL) milk
  • 1/3 cup (80mL) Boldwin Bitter Extra Spéciale/Rousse

 

Preparation

  1. Preheat oven to 350°F (180°C). Butter a 9” X 13” baking pan and place rack in centre of oven.
  2. In a large pot, bring maple syrup, beer and cream to a boil over medium-high heat, stirring occasionally. Let boil for about 10 minutes or until sauce is the consistency of syrup. Set aside.
  3. In the meantime, cream together butter and maple sugar in a food processor until smooth.
  4. Add eggs and mix again.
  5. Pour in flour and baking powder.
  6. As the food processor is mixing, pour in milk and beer in a steady stream so the batter blends evenly. Use a spatula to finish blending.
  7. Pour batter into the baking pan.
  8. Drizzle warm sauce on top of dough and cook in oven for about 30 minutes, or until a knife inserted into the pudding comes out clean and the top is golden brown.
  9. Turn oven off and let batter sit for 10 minutes. Serve warm or at room temperature with a scoop of ice cream!

 

Tip: You can also make individual puddings in small, oven-proof ramekins. Just cook for 12 to 15 minutes at 350°F (180°C).

Note: If you’d like your pudding to have a more pronounced beer taste, use 1 cup (250mL) of beer and 1 cup (250mL) of cream in the sauce.
